Ingredients
  

  • 3 cups high-protein plain nonfat Greek yogurt
  • cups low-fat cottage cheese
  • 2 scoops vanilla protein powder
  • 1 small package sugar-free Jello gelatin dessert mix any flavor
  • ½ cup hot water
  • ½ cup cold water
  • 1 teaspoon vanilla extract
  • Zero-calorie sweetener optional and to taste
  • Fresh berries or other toppings optional

Method
 

  1. Add the sugar-free Jello powder to a medium mixing bowl. Pour in the hot water and whisk continuously until the gelatin powder has completely dissolved and the liquid is smooth.
  2. Stir the cold water into the dissolved gelatin mixture. Set it aside for several minutes so it can cool slightly. Do not add extremely hot gelatin directly to the yogurt mixture.
  3. Add the cottage cheese to a high-speed blender or food processor. Blend until completely smooth, stopping to scrape down the sides as needed.
  4. Add the Greek yogurt, vanilla protein powder, and vanilla extract to the blended cottage cheese. Blend again until the mixture is thick, smooth, and creamy with no visible cottage cheese curds.
  5. Slowly pour the cooled Jello mixture into the yogurt mixture while blending on low speed. Continue blending briefly until the gelatin mixture is evenly incorporated throughout the yogurt base.
  6. Taste the mixture. If you prefer a sweeter flavor, add a small amount of zero-calorie sweetener and blend again. Add it gradually because the Jello and protein powder may already provide plenty of sweetness.
  7. If the mixture is too thick for your blender to process easily, add water one tablespoon at a time and blend after each addition. Avoid adding too much liquid because the finished fluff should remain thick and creamy.
  8. Transfer the finished mixture to a large mixing bowl and use a silicone spatula to scrape the blender thoroughly so you don't waste any of the protein-rich mixture.
  9. Divide the fluff evenly between three airtight serving containers. Each container represents one serving.
  10. Cover the containers and refrigerate for at least 30 minutes. For a thicker, colder texture, chill for 1–2 hours.
  11. When ready to serve, top with fresh berries, sliced fruit, sugar-free chocolate chips, a small amount of granola, nuts, cinnamon, or another topping of your choice. Add crunchy toppings immediately before eating so they remain crisp.
  12. Store leftover portions covered in the refrigerator and enjoy within approximately 3–4 days for the best texture and freshness.
