Ingredients
  

  • 1 lb ground beef
  • 1 small onion diced
  • 3 cloves garlic minced
  • 3 cups beef broth
  • 4 oz cream cheese
  • ½ cup heavy cream
  • 1 ½ cups shredded cheddar cheese
  • 1 10 oz can tomatoes with green chilies
  • 2 tbsp sugar-free taco seasoning
  • Optional garnishes: avocado cilantro, jalapeños, sour cream

Method
 

  1. Brown beef in a large pot; drain excess fat.
  2. Add onion and garlic; sauté 3 minutes.
  3. Stir in taco seasoning, beef broth, and tomatoes. Mix well.
  4. Lower heat, add cream cheese; stir until melted.
  5. Add shredded cheddar and heavy cream; stir until smooth.
