Start by preheating your oven to 180°C (350°F). Don’t skip this step or rush it—giving your oven enough time to fully heat ensures the bites cook evenly and develop that beautiful golden color. While the oven is heating, line your baking tray with parchment paper. This prevents the cheese from sticking and makes cleanup much easier later.
Take a large mixing bowl and add the almond flour, baking powder, garlic powder, and black pepper. Use a spoon or whisk to mix these dry ingredients thoroughly. This step is important because it ensures the baking powder and spices are evenly distributed, so every bite has consistent flavor and texture.
Add the shredded mozzarella cheese, cheddar cheese, and finely chopped turkey ham into the same bowl. Gently mix everything together until the cheese and ham are well coated with the dry mixture. This helps prevent clumping and ensures each bite has a balanced mix of ingredients.
Crack in the eggs and begin mixing everything together. At first, the mixture may seem sticky and uneven, but keep folding and pressing with your spoon or hands until it forms a thick, slightly sticky dough. If it feels too wet, you can add a small amount of almond flour (1–2 tablespoons) to bring it together.
Using your hands or a spoon, scoop out small portions of the mixture and roll them into bite-sized balls. Try to keep them similar in size so they bake evenly. If the mixture sticks to your hands, lightly dampen your fingers with water to make shaping easier.
Place each shaped bite onto the prepared baking tray, leaving a little space between them. They won’t spread too much, but giving them room allows proper air circulation, which helps them cook evenly and develop a slightly crisp exterior.
Transfer the tray to the preheated oven and bake for 12–15 minutes. Keep an eye on them during the last few minutes—you’re looking for a golden-brown top with slightly crisp edges. The cheese will melt and bind everything together while creating that delicious texture.
Once baked, remove the tray from the oven and let the bites cool for about 3–5 minutes. This step is important because it allows them to firm up slightly, making them easier to handle and enhancing their flavor. Serve warm for the best cheesy, soft-center experience.
