Ingredients
  

  • 3 ripe bananas
  • 2 large eggs
  • 1 cup nonfat Greek yogurt
  • cups oats blended
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp cinnamon
  • 1 tsp vanilla extract
  • Pinch of salt
  • 1 tbsp honey optional

Method
 

  1. Preheat oven to 350°F (175°C) and line muffin tin.
  2. Mash bananas in a bowl.
  3. Add eggs, yogurt, vanilla, and honey; whisk until smooth.
  4. Combine dry ingredients separately.
  5. Fold dry into wet — do not overmix.
  6. Pour into muffin cups (¾ full).
  7. Bake 18–22 mins until golden and springy.
  8. Cool 5 mins, then transfer to rack.
