Ingredients
  

  • 2 cups low-fat cottage cheese
  • 1 cup frozen blueberries
  • ½ cup plain non-fat Greek yogurt
  • ½ cup light whipped topping
  • 2 –3 tablespoons honey or pure maple syrup
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon zest optional

Method
 

  1. Add the cottage cheese to a high-speed blender or food processor and blend until completely smooth.
  2. Add the frozen blueberries, Greek yogurt, whipped topping, honey or maple syrup, vanilla extract, and optional lemon zest.
  3. Blend again until the mixture becomes smooth, creamy, and evenly combined.
  4. Taste the mixture and adjust the sweetness if needed.
  5. Fold in any optional mix-ins using a rubber spatula.
  6. Transfer the mixture to a freezer-safe container and spread it into an even layer.
  7. Cover tightly, pressing plastic wrap directly onto the surface before sealing with a lid.
  8. Freeze for 3–4 hours, stirring once every hour during the first 2–3 hours if desired for an even creamier texture.
  9. Remove the container from the freezer and let it sit at room temperature for 10–15 minutes before scooping.
  10. Scoop into bowls and garnish with fresh blueberries, crushed graham crackers, whipped topping, or your favorite toppings.
  11. Serve immediately and store leftovers in the freezer for up to 2 months.
