Ingredients
  

  • 6 large eggs
  • 1 cup cooked lean turkey/chicken shredded
  • ½ cup cottage cheese or Greek yogurt
  • ½ cup shredded low-fat cheese
  • 1 tsp olive oil
  • 1 whole wheat dough or 4 tortillas
  • Salt pepper, paprika
  • Optional: spinach bell peppers, mushrooms

Method
 

  1. Whisk eggs, sauté veggies, mix with turkey and cheese.
  2. Place filling on dough/tortilla, fold, seal edges.
  3. Bake at 375°F for 15–20 min (or air fry 10–12 min).
  4. Cool slightly, serve, or freeze for later.
