Season the chicken breasts with garlic powder, Italian seasoning, paprika, salt, and pepper.
Grill or pan-cook the chicken until it reaches an internal temperature of 165°F (74°C).
Let the chicken rest for 5–10 minutes before cutting it into bite-sized cubes.
Wash, dry, and chop all vegetables into evenly sized pieces.
Lightly steam the broccoli for 2–3 minutes, then rinse with cold water to preserve its bright color.
Cube the mozzarella cheese.
In a small bowl, whisk together the light Italian dressing, olive oil, red wine vinegar, Dijon mustard, Italian seasoning, garlic powder, onion powder, salt, pepper, and optional honey until smooth.
In a large mixing bowl, combine the cooled pasta, grilled chicken, tomatoes, cucumber, bell peppers, broccoli, onion, olives, mozzarella, green onions, and Parmesan cheese.
Pour about three-quarters of the dressing over the salad and gently toss until evenly coated.
Cover and refrigerate for at least 1 hour or overnight.
Before serving, toss with the remaining dressing and garnish with fresh parsley, basil, extra Parmesan, and cracked black pepper.
