Ingredients
  

  • cups plain non-fat Greek yogurt
  • 1 cup low-fat cottage cheese
  • 6 ounces light cream cheese softened
  • 2 scoops about 60 g vanilla protein powder
  • ¾ cup unsweetened shredded coconut
  • 3 tablespoons fresh lime juice
  • 2 teaspoons fresh lime zest
  • 3 tablespoons granulated monk fruit sweetener
  • 2 teaspoons vanilla extract
  • Pinch of salt

  • Extra lime zest
  • Chopped macadamia nuts
  • Chopped pecans

Method
 

  1. Blend the cottage cheese in a food processor or high-speed blender until completely smooth.
  2. Transfer the blended cottage cheese to a large mixing bowl.
  3. Add the Greek yogurt, softened cream cheese, vanilla protein powder, monk fruit sweetener, vanilla extract, lime juice, lime zest, and salt.
  4. Beat the mixture with a hand mixer until completely smooth and creamy.
  5. Gently fold in the unsweetened shredded coconut using a rubber spatula.
  6. Taste and adjust the sweetness or lime flavor if desired.
  7. Line an 8-inch square pan with parchment paper.
  8. Spread the cheesecake mixture evenly into the prepared pan.
  9. Sprinkle toasted coconut, chopped macadamia nuts, hemp hearts, and additional lime zest over the top if desired.
  10. Cover and refrigerate for at least 4 hours or overnight until firm.
  11. Lift the cheesecake from the pan using the parchment paper.
  12. Slice into 16 bite-sized squares or 12 larger dessert bars.
  13. Garnish with fresh lime zest or mint leaves before serving.
  14. Store refrigerated and enjoy chilled.
