Ingredients
  

Key Lime Filling

  • cups plain non-fat Greek yogurt
  • 1 cup low-fat cottage cheese
  • 2 scoops about 60 g vanilla protein powder
  • ¼ cup fresh lime juice
  • 2 teaspoons fresh lime zest
  • 2 –3 tablespoons powdered monk fruit sweetener or allulose
  • 1 teaspoon vanilla extract
  • 2 –4 tablespoons unsweetened almond milk as needed
  • ½ cup light whipped topping optional
Crunchy Pie Layer
  • ½ cup graham cracker crumbs
  • ¼ cup unsweetened shredded coconut
  • 1 tablespoon chia seeds optional
Optional Toppings
  • Fresh lime zest
  • Lime wedges
  • Fresh raspberries
  • Fresh strawberries
  • Toasted coconut
  • Chopped macadamia nuts
  • Graham cracker crumbs
  • Light whipped topping
  • Fresh mint

Method
 

  1. Wash and dry the limes, then finely zest enough lime for the filling and garnish.
  2. Squeeze the limes and strain the fresh juice to remove seeds and excess pulp.
  3. Add the cottage cheese to a high-speed blender or food processor and blend for 1–2 minutes until completely smooth.
  4. Transfer the blended cottage cheese to a large mixing bowl.
  5. Add the Greek yogurt and vanilla protein powder and stir until completely combined.
  6. Add the fresh lime juice, lime zest, and vanilla extract.
  7. Add 2 tablespoons of powdered monk fruit sweetener or allulose and mix thoroughly.
  8. Taste the mixture and add the remaining sweetener if you prefer a sweeter parfait.
  9. Add unsweetened almond milk 1 tablespoon at a time if the mixture is too thick, stirring thoroughly after each addition.
  10. Combine the graham cracker crumbs, shredded coconut, and optional chia seeds in a separate bowl.
  11. If using toasted coconut, allow it to cool completely before combining it with the other crunchy ingredients.
  12. Place approximately 1–2 tablespoons of the crunchy pie mixture into the bottom of each of four small jars or dessert glasses.
  13. Spoon a layer of the key lime filling over the crunchy layer.
  14. Repeat the layers until the containers are almost full, finishing with the creamy filling.
  15. Add a small amount of whipped topping if desired.
  16. Garnish with fresh lime zest, a small lime wedge, toasted coconut, fresh berries, or chopped macadamia nuts.
  17. Cover the parfaits and refrigerate for at least 30 minutes. Chill for 1–2 hours for the best texture and flavor.
  18. Add crunchy toppings immediately before serving if you want maximum crispness.
  19. Serve cold and enjoy.
  20. Store prepared parfaits in airtight containers in the refrigerator for up to 3–4 days.
