Ingredients
  

  • 2 cups plain non-fat Greek yogurt
  • 1 cup low-fat cottage cheese
  • 4 ounces light cream cheese softened
  • 2 scoops about 60 g chocolate protein powder
  • 2 tablespoons unsweetened cocoa powder
  • 2 teaspoons instant espresso powder
  • 1 tablespoon warm water
  • 2 tablespoons granulated monk fruit sweetener
  • 2 teaspoons vanilla extract
  • Pinch of salt
  • 2 cups sugar-free whipped topping
  • 1 –2 tablespoons skim milk or unsweetened almond milk optional, if needed

  • 2 tablespoons sugar-free chocolate chips
  • 1 tablespoon cacao nibs
  • 1 tablespoon chopped almonds
  • 1 tablespoon hemp hearts
  • ¼ teaspoon ground cinnamon

  • Fresh raspberries
  • Chocolate-covered espresso beans
  • Chopped pecans
  • Fresh mint leaves

Method
 

  1. Blend the cottage cheese in a food processor or high-speed blender until completely smooth.
  2. Transfer the blended cottage cheese to a large mixing bowl.
  3. Add the Greek yogurt, softened cream cheese, chocolate protein powder, cocoa powder, monk fruit sweetener, vanilla extract, and salt.
  4. Beat the mixture until smooth and creamy.
  5. Dissolve the espresso powder in the warm water and stir it into the cheesecake mixture until evenly combined.
  6. If needed, add milk one tablespoon at a time until the mixture reaches a smooth consistency.
  7. Gently fold the sugar-free whipped topping into the mixture using a rubber spatula until no white streaks remain.
  8. Taste and adjust the sweetness, coffee flavor, or chocolate intensity if desired.
  9. Divide the mixture evenly among four airtight dessert jars or serving glasses.
  10. Smooth the tops and add optional mix-ins or toppings if desired.
  11. Cover and refrigerate for at least 2 hours, preferably overnight.
  12. Serve chilled and enjoy within 5 days.
