Ingredients
  

  • 2 cups plain non-fat Greek yogurt
  • 1 cup low-fat cottage cheese
  • 2 scoops about 60 g vanilla protein powder
  • 2 cups sugar-free whipped topping
  • 2 large fresh peaches diced (about 2 cups)
  • 2 tablespoons granulated monk fruit sweetener
  • 2 teaspoons vanilla extract
  • 1 teaspoon fresh lemon juice
  • 1 –2 tablespoons skim milk or unsweetened almond milk optional, if needed for consistency

  • 1 tablespoon chia seeds
  • 1 tablespoon hemp hearts
  • 2 tablespoons chopped pecans
  • 2 tablespoons sliced almonds
  • 2 tablespoons unsweetened coconut flakes
  • ¼ teaspoon ground cinnamon

Method
 

  1. Wash, dry, and dice the fresh peaches into small bite-sized cubes. Set aside a few slices for garnish if desired.
  2. Add the cottage cheese to a food processor or high-speed blender and blend for 2–3 minutes until completely smooth and creamy.
  3. Transfer the blended cottage cheese to a large mixing bowl.
  4. Add the Greek yogurt, vanilla protein powder, monk fruit sweetener, vanilla extract, and lemon juice.
  5. Mix with a hand mixer or whisk until smooth and fully combined.
  6. If the mixture is too thick, add milk one tablespoon at a time until it reaches a creamy consistency.
  7. Gently fold the sugar-free whipped topping into the protein mixture using a rubber spatula, taking care not to deflate it.
  8. Fold the diced peaches into the mixture until evenly distributed.
  9. Taste and adjust the sweetness or vanilla flavor if needed.
  10. Divide the mixture evenly among four airtight meal prep jars or dessert glasses.
  11. Smooth the tops with the back of a spoon and add optional toppings if desired.
  12. Cover and refrigerate for at least 2 hours, preferably overnight, before serving.
  13. Serve chilled and enjoy within 4 days.
