Method
- Preheat oven to 350°F. Line a jelly roll pan with parchment.
- Mix dry ingredients. Beat eggs, sweetener, and vanilla until fluffy. Fold in carrots.
- Spread batter evenly, bake 12–15 min.
- Roll cake (with parchment) while warm; cool.
- Mix filling ingredients until smooth.
- Unroll cake, spread filling, re-roll, and chill before slicing.
