Ingredients
  

  • 1 cup almond flour
  • ¾ cup shredded carrots
  • 4 eggs
  • ½ cup keto sweetener
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • ¼ tsp salt
  • 1 tsp vanilla extract
Filling:
  • 8 oz cream cheese
  • 2 tbsp butter
  • ½ cup powdered keto sweetener
  • 1 tsp vanilla extract

Method
 

  1. Preheat oven to 350°F. Line a jelly roll pan with parchment.
  2. Mix dry ingredients. Beat eggs, sweetener, and vanilla until fluffy. Fold in carrots.
  3. Spread batter evenly, bake 12–15 min.
  4. Roll cake (with parchment) while warm; cool.
  5. Mix filling ingredients until smooth.
  6. Unroll cake, spread filling, re-roll, and chill before slicing.
