Ingredients
  

  • 2 cups unsweetened shredded coconut
  • 1 cup protein powder low-carb, vanilla or unflavored
  • ½ cup nut butter almond/peanut/sunflower seed
  • ¼ cup coconut oil
  • 3 tbsp low-carb sweetener
  • 1 tsp vanilla extract
  • Sugar-free chocolate optional topping

Method
 

  1. Mix shredded coconut and protein powder in a bowl.
  2. Melt coconut oil and nut butter, stir in sweetener and vanilla.
  3. Combine wet and dry ingredients; stir until sticky.
  4. Press mixture into lined loaf pan.
  5. Add melted chocolate on top if desired.
  6. Chill for 1–2 hours, then slice into bars.
