Ingredients
  

  • 2 cups almond flour
  • 1 cup unsweetened shredded coconut
  • ½ cup chopped pecans or walnuts
  • ½ cup sugar-free chocolate chips
  • ½ cup butter softened
  • 2 large eggs
  • ¾ cup sugar-free sweetener
  • 1 tsp vanilla extract
  • ½ tsp baking soda
  • Pinch of salt

Method
 

  1. Preheat oven to 350°F (175°C). Line baking sheet with parchment paper.
  2. In a bowl, whisk almond flour, coconut, nuts, baking soda, and salt.
  3. In another bowl, cream butter and sweetener. Add eggs and vanilla.
  4. Fold dry ingredients into wet mixture. Stir in chocolate chips.
  5. Scoop dough onto baking sheet.
  6. Bake 12–14 minutes until golden.
  7. Cool on wire rack before serving.
