Ingredients
  

Crust
  • 2 cups almond flour
  • ¼ cup coconut flour
  • ½ cup melted butter
  • ¼ cup powdered sweetener
  • 1 tsp vanilla extract
Filling
  • 4 large eggs
  • ¾ cup powdered sweetener
  • ½ cup lemon juice fresh
  • 2 tbsp lemon zest
  • ½ cup heavy cream
  • 2 tbsp coconut flour

Method
 

  1. Preheat oven to 350°F (175°C). Line an 8x8-inch pan with parchment.
  2. Mix crust ingredients, press into pan, bake 10–12 minutes.
  3. Whisk filling ingredients until smooth, pour over crust.
  4. Bake 20–25 minutes until set.
  5. Cool fully, then refrigerate 2 hours before slicing into 12 squares.
