- Preheat oven to 350°F (175°C) and grease a 9-inch pie dish.
- Whisk eggs until frothy.
- Add sweetener, vanilla, butter, and salt; whisk well.
- Stir in almond milk until smooth.
- Fold in shredded coconut.
- Pour mixture into pie dish and smooth the top.
- Bake 40–45 minutes until golden and set.
- Cool, slice, and enjoy!
