  • 1 cup unsweetened shredded coconut
  • 1 ½ cups almond milk unsweetened
  • ½ cup keto-friendly sweetener
  • 1 tsp vanilla extract
  • 2 tbsp melted butter
  • Pinch of salt

Method
 

  1. Preheat oven to 350°F (175°C) and grease a 9-inch pie dish.
  2. Whisk eggs until frothy.
  3. Add sweetener, vanilla, butter, and salt; whisk well.
  4. Stir in almond milk until smooth.
  5. Fold in shredded coconut.
  6. Pour mixture into pie dish and smooth the top.
  7. Bake 40–45 minutes until golden and set.
