Ingredients
  

  • 2 cups almond flour
  • 1 tbsp baking powder
  • ½ tsp salt
  • 2 large eggs
  • ¼ cup melted butter
  • 1 cup shredded cheese
  • ¼ cup heavy cream
  • ½ tsp garlic powder optional

Method
 

  1. Preheat your oven to 180°C (350°F) and give it a few minutes to fully come up to temperature so the biscuits bake evenly from the start. While the oven is heating, line a baking tray with parchment paper—this not only prevents sticking but also helps the bottoms cook to a light golden color without burning. Set the tray aside so it’s ready when your dough is done.
  2. Take a medium to large mixing bowl and add the almond flour, baking powder, salt, and garlic powder. Use a spoon or whisk to mix everything thoroughly, making sure there are no lumps left in the almond flour. This step is important because evenly distributed dry ingredients ensure your biscuits rise properly and have consistent flavor in every bite.
  3. Crack the eggs directly into the bowl with the dry ingredients, then pour in the melted butter and heavy cream. Make sure the butter isn’t too hot when adding it, as you don’t want to accidentally cook the eggs. Start mixing gently, folding everything together rather than aggressively stirring. Keep mixing until a thick, soft dough forms—it should hold its shape but still feel slightly moist. Avoid overmixing here, as that can make the biscuits dense instead of tender.
  4. Add the shredded cheese to the dough and fold it in carefully using a spatula or spoon. Take your time to ensure the cheese is evenly spread throughout the mixture so every biscuit has that rich, cheesy flavor. The dough will become a bit thicker and slightly sticky at this stage, which is exactly what you want.
  5. Using a spoon or cookie scoop, take portions of the dough and drop them directly onto your prepared baking tray. Don’t worry about shaping them perfectly—these are drop biscuits, so a rustic look is part of their charm. Leave a little space between each portion to allow for slight spreading as they bake.
  6. Place the tray in the center of your preheated oven and bake for about 12–15 minutes. Keep an eye on them during the last few minutes—the tops should turn a beautiful golden brown, and the edges should look slightly crisp. If you gently touch the top, it should feel set and not overly soft.
  7. Once baked, remove the tray from the oven and let the biscuits rest on the tray for about 5 minutes. This cooling time helps them firm up and makes them easier to handle. Serve them warm for the best texture and flavor, when the cheese is still slightly melty and the inside is soft and fluffy.
