  • 2 cups almond flour
  • ½ cup Greek yogurt
  • 3 large eggs
  • ½ cup powdered erythritol
  • ¼ cup melted butter
  • 1 tsp baking powder
  • Zest of 1 lemon + 2 tbsp juice
  • 1 tsp vanilla extract
  • Pinch of salt

Method
 

  1. Preheat oven to 350°F (175°C), line loaf pan with parchment.
  2. Whisk eggs, yogurt, butter, lemon juice, zest, and vanilla until smooth.
  3. Fold in almond flour, erythritol, baking powder, and salt.
  4. Pour into pan, smooth top, and bake 40–45 minutes.
  5. Cool fully before slicing.
