Ingredients
  

  • 1 ½ cups almond flour
  • ½ cup cocoa powder
  • ½ cup erythritol
  • 1 tsp baking powder
  • ¼ tsp salt
  • 3 eggs
  • ½ cup almond milk
  • cup melted butter
  • 1 tsp vanilla
  • 1 ½ cups shredded coconut
  • ½ cup heavy cream
  • 3 tbsp powdered erythritol
  • ½ cup sugar-free chocolate chips
  • 2 tbsp butter

Method
 

  1. Preheat oven to 350°F (175°C).
  2. Mix dry + wet cake ingredients separately, then combine.
  3. Bake 20–25 mins. Cool.
  4. Heat cream, erythritol, vanilla → stir in coconut → spread on cake.
  5. Melt chocolate + butter → pour over filling.
  6. Chill 30 mins. Slice & enjoy.
