Method
- Preheat oven to 350°F (175°C).
- Mix dry + wet cake ingredients separately, then combine.
- Bake 20–25 mins. Cool.
- Heat cream, erythritol, vanilla → stir in coconut → spread on cake.
- Melt chocolate + butter → pour over filling.
- Chill 30 mins. Slice & enjoy.
