Method
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Cream butter and sweetener until fluffy.
- Mix in vanilla (and optional flavors).
- In a separate bowl, whisk almond flour + salt. Add to butter mixture; stir into dough.
- Roll into balls, flatten into discs, place on baking sheet.
- Bake 10–12 minutes until edges are lightly golden.
- Cool 5 minutes on the sheet, then transfer to a rack to cool fully.
