Ingredients
  

  • 2 cups almond flour
  • 1/2 cup unsalted butter softened
  • 1/3 cup powdered erythritol or monk fruit
  • 1 tsp vanilla extract
  • Pinch of salt
  • Optional 1/2 tsp almond extract or lemon zest

Method
 

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Cream butter and sweetener until fluffy.
  3. Mix in vanilla (and optional flavors).
  4. In a separate bowl, whisk almond flour + salt. Add to butter mixture; stir into dough.
  5. Roll into balls, flatten into discs, place on baking sheet.
  6. Bake 10–12 minutes until edges are lightly golden.
  7. Cool 5 minutes on the sheet, then transfer to a rack to cool fully.
