Ingredients
  

  • 1 lb shrimp peeled, deveined
  • 2 cups cauliflower rice
  • 3 tbsp butter
  • 2 tbsp olive oil
  • 3 garlic cloves minced
  • ½ cup chicken broth or white wine, optional
  • Juice + zest of 1 lemon
  • 2 tbsp parsley chopped
  • Salt pepper, red pepper flakes

Method
 

  1. Pat shrimp dry, season lightly.
  2. Heat butter + oil, sear shrimp 1–2 min per side. Remove.
  3. Sauté garlic, deglaze with broth, add lemon.
  4. Cook cauliflower rice in another skillet until tender.
  5. Return shrimp to pan, toss in sauce.
  6. Serve over cauliflower rice with parsley and lemon.
