Ingredients
  

  • 1 ripe banana
  • 2 eggs
  • 2 tbsp fat-free Greek yogurt
  • ¼ tsp cinnamon
  • ½ tsp vanilla extract
  • Pinch of salt

Method
 

  1. Preheat oven to 375°F (190°C).
  2. Mash banana in a bowl until smooth.
  3. Add yogurt, cinnamon, vanilla, and salt. Mix well.
  4. Whisk eggs separately until frothy, then fold in gently.
  5. Pour into ramekin and bake 15–17 minutes until puffed and golden.
