Ingredients
  

  • 1 lb lean ground turkey
  • 1 cup diced onion
  • 1 bell pepper
  • 1 can black beans
  • 1 can corn
  • 1 can diced tomatoes with chilies
  • 1 can tomato sauce
  • 2 cups chicken broth
  • 1 taco seasoning packet
  • ½ cup nonfat Greek yogurt
  • ½ cup reduced-fat cheese

Method
 

  1. Brown turkey in pot.
  2. Add onion and bell pepper, cook 3–4 minutes.
  3. Add taco seasoning, beans, corn, tomatoes, and sauce. Stir.
  4. Pour in broth and simmer 15 minutes.
  5. Stir in yogurt and cheese until melted.
  6. Serve hot with garnish of choice.
