Ingredients
  

  • 1 cup pumpkin puree
  • 2 egg whites
  • ½ cup unsweetened applesauce
  • 1 tsp vanilla extract
  • 1 ½ cups oat flour
  • 1 ½ tsp baking powder
  • 1 tsp pumpkin pie spice
  • ¼ tsp salt
  • 2 tbsp brown sugar substitute

Method
 

  1. Preheat oven to 350°F. Line muffin pan.
  2. Whisk wet ingredients together until smooth.
  3. Combine dry ingredients separately.
  4. Fold dry into wet.
  5. Divide into 12 muffin cups.
  6. Bake 18–22 minutes or until toothpick comes out clean.
  7. Cool & enjoy!
