  • 1 red bell pepper chopped
  • 1 cup mushrooms sliced
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 cup diced tomatoes no salt added
🧀 Creamy Base
  • 1 cup plain nonfat Greek yogurt
  • 1 egg + 2 egg whites for binding and protein
  • 1 teaspoon Italian seasoning
  • Salt and black pepper to taste
🧂 Cheese & Flavor
  • 1 cup reduced-fat shredded cheese mozzarella, cheddar, or a blend
  • Nonstick cooking spray for greasing the baking dish

Method
 

  1. Preheat oven to 375°F.
  2. Sauté veggies until slightly tender.
  3. Mix eggs, yogurt, tomatoes, and seasoning.
  4. Combine everything and transfer to baking dish.
