Ingredients
  

  • 1 ½ lbs boneless skinless chicken breasts
  • 1 onion diced
  • 3 cloves garlic minced
  • 2 bell peppers diced
  • 1 can diced tomatoes 15 oz
  • 1 can tomato sauce 15 oz
  • 1 can black beans rinsed
  • 1 can white beans rinsed
  • 1 can corn drained
  • 2 cups chicken broth
  • 1 tbsp chili powder
  • 1 tsp cumin
  • ½ tsp smoked paprika
  • ¼ tsp cayenne optional
  • Salt & pepper to taste

Method
 

  1. In a large pot, sauté onion and garlic.
  2. Add peppers, chicken, tomatoes, tomato sauce, and broth.
  3. Stir in all spices and bring to a boil.
  4. Reduce heat, cover, and simmer 25–30 minutes.
  5. Shred chicken, return to pot, add beans and corn.
  6. Simmer uncovered 10 minutes, adjust seasoning, and serve warm.
