Method
- In a large pot, sauté onion and garlic.
- Add peppers, chicken, tomatoes, tomato sauce, and broth.
- Stir in all spices and bring to a boil.
- Reduce heat, cover, and simmer 25–30 minutes.
- Shred chicken, return to pot, add beans and corn.
- Simmer uncovered 10 minutes, adjust seasoning, and serve warm.
