Ingredients
  

Chocolate Protein Filling
  • 2 cups plain non-fat Greek yogurt
  • 1 cup low-fat cottage cheese
  • 4 ounces light cream cheese softened
  • 2 scoops about 60 g chocolate protein powder
  • 2 tablespoons unsweetened cocoa powder
  • 2 tablespoons granulated monk fruit sweetener
  • 2 teaspoons vanilla extract
  • 1 –2 tablespoons skim milk or unsweetened almond milk if needed
Fruit Layer
  • 2 cups fresh strawberries washed and sliced
Crunch Layer
  • 1 cup high-protein granola or
  • ½ cup chopped almonds mixed with ½ cup cacao nibs
Optional Toppings
  • Fresh strawberries
  • Chocolate shavings
  • Cacao nibs
  • Chopped almonds
  • Hemp hearts
  • Cocoa powder
  • Light whipped topping
  • Fresh mint leaves

Method
 

  1. Blend the cottage cheese until completely smooth.
  2. Transfer it to a large mixing bowl.
  3. Add the Greek yogurt, softened cream cheese, chocolate protein powder, cocoa powder, monk fruit sweetener, and vanilla extract.
  4. Beat until smooth, creamy, and fully combined.
  5. Add milk one tablespoon at a time if needed to reach a creamy consistency.
  6. Slice the strawberries into even pieces.
  7. Combine the ingredients for the crunch layer in a separate bowl.
  8. Spoon a layer of chocolate filling into each jar.
  9. Add a layer of sliced strawberries.
  10. Sprinkle on a layer of the crunchy mixture.
  11. Repeat the layers until the jars are almost full.
  12. Finish with a final layer of chocolate filling.
  13. Decorate with strawberries, chocolate shavings, cacao nibs, cocoa powder, or chopped almonds.
  14. Cover and refrigerate for at least 2 hours, preferably overnight.
  15. Serve chilled and enjoy within 5 days.
