Ingredients
  

  • 1 1/2 cups low-fat cottage cheese
  • 1 cup plain nonfat Greek yogurt
  • 52 g vanilla whey protein powder
  • 2 tablespoons sugar-free caramel syrup
  • 1 teaspoon vanilla extract
  • 1/8 teaspoon fine sea salt
  • 2 –4 tablespoons unsweetened almond milk as needed
  • 1 –2 teaspoons powdered zero-calorie sweetener optional

Method
 

  1. Add the cottage cheese and Greek yogurt to a blender or food processor. Blend until completely smooth and no visible cottage cheese curds remain.
  2. Add the vanilla whey protein powder and blend again until fully incorporated and creamy.
  3. Add the caramel syrup, vanilla extract, and sea salt. Blend briefly until evenly combined.
  4. Check the consistency. If the pudding is too thick, add unsweetened almond milk 1 tablespoon at a time, blending briefly after each addition.
  5. Taste the pudding. If additional sweetness is needed, add a small amount of powdered zero-calorie sweetener and blend again.
  6. Divide the pudding evenly between 4 refrigerator-safe containers.
  7. Cover and refrigerate for at least 2 hours so the pudding can thicken and the flavors can fully develop.
  8. Serve chilled with optional berries, chopped pecans, cinnamon, or a small caramel drizzle.
